EU histamine survey reveals training gaps

The European Commission has assessed histamine controls in fishery products with training highlighted as one of the major problems.

Histamine toxicity, also known as scombroid poisoning, is associated with consumption of spoiled fish, such as tuna, mackerel, and sardines. Proper hygiene and maintenance of the cold chain during handling, storage, transport and distribution help to reduce the risk.
